Chef Etni was introduced to baking at a young age, which inspired a dream of becoming a pastry chef. They studied at Austin Community College, earning certification in Pastry Arts. With about five years of experience in the food industry, Chef Etni transitioned to the pastry industry, beginning as a decorator at HEB bakery. Seeking to expand their skills, they moved to Central Market, where they explored more than just cake decorating. A year ago, Chef Etni started a home business, catering pastries and cupcakes for birthdays and small events, while also decorating cakes for various occasions. Over time, they developed an interest in traveling, exploring different cuisines, and learning about unique flavor combinations.

It was an okay class for someone who has never baked macarons before . But I felt due to the lack of equipments it ran longer than expected. The chef was very polite and answered all questions .

The instructor did a nice job. Everything was organized and ready for the preparation of macarons. I think she assumed that everyone knew how to crack an egg so that the yolk doesn't mix with the whites. I understand the assumption because I did too until I saw the different ways people crack eggs! Overall, the class went smoothly and we made some yummy macarons. The Even Hotel didn't have an adequate oven to handle the demands of a class of our size. That did lead to the class going long and having some people leave around 9:30. The instructor did a nice job keeping everyone informed and trying to move things along.

I enjoyed the overall class. The downtime while baking was unavoidable, but I do think something fun could have been planned for us during that time. Not sure what, exactly - maybe reading some history in macarons, and then doing a fun trivia game? It was quite a long time to wait!
