With over 10 years dedicated to professional gastronomy, Chef Pablo's culinary journey began with a solid foundation in a little town called Concón in Chile, South America. Chef Pablo has worked in kitchens throughout the world including Chile, Peru, Ecuador, Mexico, France, Germany and USA including valuable experience at Kusaki LA. This immersion has allowed me to master everything Sushi. Recently, In my last years I have been redefining sushi with a Vegan twist and combining it with the Peruvian flavors using all the Japanese techniques.
