Tommaso was co-owner of the Italian restaurant TANTI BACI in NYC, before spending time in

Peru to learn about Amazonian produce and agricultural practice. It was in Peru that he started the tomato sauce brand DUE AMICI, which is still being sold in Lima today. After moving back to NYC, Tommaso opened PROPRIO COSI, a company that will serve “on the go” organic food, with ingredients from local farms and businesses. He’s also the producer of a bi-monthly literary podcast series based on award-winning short stories and novels.

Thank you Chef Tommaso for an incredible experience! He was straight forward, gave clear instructions, and the class was so much fun that it flew by! The ravioli ended up being incredible too. I'd highly recommend this class to anyone.
