Tommaso was co-owner of the Italian restaurant TANTI BACI in NYC, before spending time in

Peru to learn about Amazonian produce and agricultural practice. It was in Peru that he started the tomato sauce brand DUE AMICI, which is still being sold in Lima today. After moving back to NYC, Tommaso opened PROPRIO COSI, a company that will serve “on the go” organic food, with ingredients from local farms and businesses. He’s also the producer of a bi-monthly literary podcast series based on award-winning short stories and novels.

Wonderful teacher. Making the focaccia was a fun experience. The only reason why I didn't give it five stars is the room was very cold. But I would definitely take another class with this instructor.
