Tommaso was co-owner of the Italian restaurant TANTI BACI in NYC, before spending time in
Peru to learn about Amazonian produce and agricultural practice. It was in Peru that he started the tomato sauce brand DUE AMICI, which is still being sold in Lima today. After moving back to NYC, Tommaso opened PROPRIO COSI, a company that will serve “on the go” organic food, with ingredients from local farms and businesses. He’s also the producer of the literary podcast FICTIONZ, a bimonthly series of premium narrative podcasts based on award-winning short stories and novels.

My team and I loved this experience!!! Chef Tommaso is such a delight and a great person to have as a Chef. He is so fun and detailed, and we had a blast doing the workshop. We would 1000% come back again. He got us last minute gluten free pasta for 1 individual to eat and made us the best yummy dessert.
