Former Modern Dancer and 'survivor of the 1960s' Fran retired from her job as a portfolio manager in 2011 to attend the Paris Le Cordon Bleu school. She completed her diploma in Cuisine in 2014 and has taught French and Spanish cooking to adults both in Australia and the United States.

Chef Frances truly demystified the art of making macarons and completely removed my fear of attempting them at home! After her class, I have a much deeper appreciation for these delicate treats. The best part about learning something new? You walk away with fresh knowledge and newfound confidence—now I can’t wait to bake my own batches! I highly recommend this class to everyone! What a great way to bond with others while learning a new edible craft!

The instructor was excellent and engaging. The class was educational & fun. Frances has an interesting culinary background as well. I purchased two separate tickets. For whatever reason I had to share. I rated 4 stars because the presentation & supplies needs improvement to project a cohesive professional company image. For example, the hand mixers needed to be cleaned. There should be matching bowls, utensils for each student and tablecloths on all tables. Instead of pre-measured ingredients packaged in sandwich baggies, please consider using small deli containers that are food & dishwasher safe that can be washed and reused. Each should be clearly labeled with the contents. Food preparation gloves should also be provided. There wasn’t enough bakery boxes to go around to place the macarons in to take home. For fairly large classes I recommend an assistant to support the instructor. This will maintain organization throughout each step and a steady pace to ensure the class stays within the allotted time frame. In my opinion the setup and clean up is quite an undertaking for one person. A few of us gladly volunteered to help with the clean up. Overall I enjoyed the class and the experience. The hotel venue and location was convenient and easily accessible.
