Chef Gian is passionate about Japanese cuisine, with a special focus on sushi. A graduate of the HTEI Culinary School in Caracas, he later earned a Master’s in Italian Cuisine from ICIF in Torino, and obtained a Sushi Knowledge Certification from the All Japanese Sushi Association (AJSA) in Paris. Chef Gian has represented his craft in several international events and competitions, including the European Sushi Championship 2024 in Monte Carlo and the French Sushi Challenge 2015 in Paris, where he was awarded second place. With over 20 years of international experience in Japanese, Italian, Latin American, and French cuisine, Chef Gian continues to innovate while honoring traditional techniques.
