Fresh Focaccia and Burrata

Description

In this engaging and small class setting, you will learn how to make the perfect focaccia quickly or aged overnight for the best texture and flavor. Our dough in this class will be baked with caramelized onion and rosemary. Chef Monte will also be teaching you how to make burrata, a cheese made with fresh mozzarella and cream.  You'll learn about culturing, rennet, and a special shaping technique to create the signature beggar's purse.  

Once you have finished making your fresh bread and cheese, everyone will dine together and say cheers to celebrate the fruits of our labor.

For the best experience, please make one reservation on behalf of everyone in your party so we can arrange social distance friendly setup for everyone. No experience is required! We provide all the equipment and ingredients, which are easy to find at local markets in case you wish to recreate the dish on your own after the class. Our events are casual and meant to be fun and instructive, not hardcore. This class is designed to be just as fun for the cooking enthusiast who wants to be a part of every step as it is for the first-timer who’s happier observing and assisting (or taste testing).

Meet your chef instructor
Chef Monte comes from a long heritage of Italian chefs - from his great grandfather to his father. He has been a culinary instructor for nine years, with the last three years at Le Cordon Bleu Boston. He teaches with history, simplicity, and vision to recreate the beauties of food with an innovative and hungry goal in mind.
Where the class will be
Guest requirement

Guests are invited to BYOB - one bottle of wine per pair.  Guests are also welcome to bring their own aprons to class, otherwise chef’s aprons will be provided.  To ensure the safety and enriching experience of all participants, we require children aged 14 to 17 be accompanied by a parent or guardian during our cooking classes.  Classes are intended for adults 18+.

Cancellation policy
Reschedule request have to be made at least 48 hours before the class for groups of less than 6 people and 14 days for groups of 6 people or more. Cancellations are not permitted and tickets are non-refundable.See terms and policy.

The focaccia class was at Chef Monte’s beautiful home in Alameda. He was so nice and patient and answered every question we had. Chef Monte definitely has a passion for cooking and it shows in his enthusiasm to impart his knowledge. After learning about focaccia and buratta, we ate in his lovely garden. I felt like I was transported to the Mediterraneans. We brought home the dough we worked on and even some leftover focaccia. It was delicious.

Monte, your knowledge and background and your passion for cooking is engaging and inspiring and makes it very exciting to learn from you. Happy to share some pro tips for your teaching that will take your classes to the next level: Take time to ask and get to know who you are teaching and what they are bringing to the learning space. (Co-create it). Choose less to make or teach, and give us hands on experiences for everything. Be ready at end with to go containers for what we had a hand in making (cheese, dough etc). Since it’s a short time for instance, you could share a recipe for a focaccia at home but then have us work with making a few different types of our own with various toppings to get the feel of working the dough. I think students come for classes like these for experience and learning. Hope these ideas are helpful on your journey. It was nice meeting you.
