Classic French Macarons

Description

Be transported to the patisseries of Paris with this classic French Macaron class!

Don your chef aprons, grab your whisks and lets get baking! In this fun and interactive class, you will learn the fine art to making these mouthwatering morsels that are easy enough to be done in your own kitchen! The classic 'Gerbert' or 'Paris Macaron' is a French meringue-based almond sandwich cookie. The celebrated original tea shop Ladurée on the Champs-Elysees in Paris is given credit for the invention of the classic French-style filled macaroon. However the cookies themselves are thought to have actually originated in Italy during the Renaissance. Their name comes from the Italian word “maccherone” meaning fine dough.

Together with our classically trained Pastry Chef Instructor, we will demystify the making of these highly sought-after meringue-based sandwich cookies. Our Pastry Chef Instructor will take you through a detailed demonstration, before you will be guided step-by-step in replicating the process of meringue mixing, otherwise known as 'macaronage', piping, baking, assembling and of course, eating! We will also explore a few flavour profiles and filling variations to make your macarons really stand out from the rest!

No experience is required! We provide all the equipment and ingredients, which are easy to find at local markets if you do not already have them in your home kitchen. Our events are casual and meant to be fun and instructive, not hardcore. This class is designed to be just as fun for the baking enthusiast who wants to be a part of every step as it is for the first-timer who is happier observing and assisting (or taste testing). You will work with other students in groups of 2-4. Please arrive 15 minutes early to check in, especially if you are part of a large group. BYOB is welcome.

The instructor was excellent and engaging. The class was educational & fun. Frances has an interesting culinary background as well. I purchased two separate tickets. For whatever reason I had to share. I rated 4 stars because the presentation & supplies needs improvement to project a cohesive professional company image. For example, the hand mixers needed to be cleaned. There should be matching bowls, utensils for each student and tablecloths on all tables. Instead of pre-measured ingredients packaged in sandwich baggies, please consider using small deli containers that are food & dishwasher safe that can be washed and reused. Each should be clearly labeled with the contents. Food preparation gloves should also be provided. There wasn’t enough bakery boxes to go around to place the macarons in to take home. For fairly large classes I recommend an assistant to support the instructor. This will maintain organization throughout each step and a steady pace to ensure the class stays within the allotted time frame. In my opinion the setup and clean up is quite an undertaking for one person. A few of us gladly volunteered to help with the clean up. Overall I enjoyed the class and the experience. The hotel venue and location was convenient and easily accessible.

Great experience! Making macarons has always been a goal of mine and past attempts at home have been unsuccessful. The class was really helpful to learn the technique of macaronage and I feel able to recreate the process at home with new recipe and notes!

Chef Frances was great! I’ve never been to a cooking class like this. I came by myself but I had a GREAT time. She was clear with instructions and was very knowledgable on techniques and consistency on making the batter. Highly recommend!

We had a wonderful time with Fran teaching the class. She made everything incredibly clear and made sure never to task us with too much at any one time. She gave us very clear goals with every step and explained them well enough that I feel like I could take this project on at home!

Fran had completely prepared the classroom ahead of time, i.e., the tables were set in a consistent manner, pre-measured ingredients were in ziploc bags, bowls and spatulas were on the table as well, and the mixers were plugged in and ready for use. All items needed for her demonstration table were there as well so there was no having to wait for her to get a certain ingredient. Her steps were clear and easy to follow, and she did not move on until everyone was at the same step. She clearly knew how to make French Macarons.
