Classic Handmade Pasta

Description

There’s nothing so delicious as fresh pasta, and creating it yourself.

Learn how to make the perfect pasta dough and then transform it into beautiful noodles, Fettuccine or Pappardelle. While your pasta dough is resting, your Chef Instructor will demo how to make two different pasta sauces from scratch: Classic Marinara and Fresh Basil Pesto. Then we'll break out the pasta rollers to learn the traditional way of flattening out the dough until it can be shaped into the perfect noodle. Once your pasta noodles are cooked in boiling water, you will be able to sit down and enjoy your pasta paired with each sauce. Sit back, relax, and enjoy tasting your handmade creation paired with a refreshing beer from Wild Barrel Brewing if you're inclined.

No experience is required! We provide all the equipment and ingredients, which are easy to find at local markets if you don’t already have them in your home kitchen. This class is designed to be just as fun for the cooking enthusiast who wants to be a part of every step as it is for the first-timer who’s happier observing and assisting (or taste testing).

Please arrive 15 minutes early to check in. Drinks are available for purchase from the venue and are not included in the ticket price. Class attendance is open to anyone 18+. Drinks are available for purchase for 21+ with proof of valid ID.

With a degree in nutrition, Chef Ben spent the first 6 years of his career working as a food scientist for a billion dollar food company. Eventually he realized that processed food was not his passion, and he's spent every spare moment since then mastering his craft in the kitchen with real food, specializing in healthy California inspired cuisine, with an emphasis on whole foods and plant-based recipes.

Where the class will be
Grafted Cellars
2379 La Mirada Drive Vista, CA 92081
Nestled amongst breweries and distilleries in a Vista business park, Grafted Cellars is a hidden gem of quality wine. A family-owned Urban Winery, we source our grapes from right here in Vista, to Napa Valley, to Oregon’s Willamette Valley, any AVA in between…but quality varietals from our own South Coast AVA are a priority, to showcase our local terroir and potential. Fruit is processed and aged at our in-house cellar, right behind our tasting room… we do it all right here. With over 20 varietals represented (and always more on the way), and with love and appreciation for both new and old world style and expression, Grafted Cellars has something for everyone.

What a cool experience! Really impressed with the simple ingredients but amazed at how delicious it all turned out! If we had our own pasta maker I might have felt less rushed, as we had 3 couples to one device. Would also love some wine (vs beer from the brewery) and fun Italian music to cook to!

If you want to use nuts as an ingredient, I would suggest including a warning when people sign up. Wiping down the utensil you used will not stop contamination of other foods, and will prevent anyone with a nut allergy from eating anything that utensil has touched. I would keep separate utensils for pesto and tomato sauce.

This was a fun introduction to pasta making. Ben made it easy to understand the technique and how to make a few sauces to compliment the pasta we made. I will be attending more classes with CocuSocial 🙂
