Cheese is quite an ancient food and remains one of the most beloved by all nationalities. In this class you will learn the foundation of cheese making. How does a single ingredient, milk, turn into so many varieties, shapes and flavors of cheese? It includes a sample of different animal milk, a demonstration on the separation of curds and whey and a tasting of a full range of various cheeses.
Presentation of artisan cheese is just as important as knowing all about it. In the course, we prepare a vegetable and a fruit preserve from scratch to pair with cheeses, then discuss and learn the basics of choosing the best wines – using our easy and flawless secret method. You will be surprised how our pairing system will make you an expert “overnight.”
Finally, we create a perfect cheeseboard! Using height, color and a simple approach, we will put together a stunning cheese board worthy of a thousand photographs. Surprise friends, neighbors and family during your next gathering by presenting a stunning and tempting cheeseboard with techniques learned in this class.
We will end by watching our “hard work” gobbled up! But before that happens, make sure you snap a photo or two of the beautiful spread you have created. When cheese gets its picture taken, what does it say?
No experience necessary! We provide all the equipment and ingredients, which are easy to find at local markets if you don’t already have them in your home kitchen. Our events are casual and meant to be fun and instructive. This class is designed to be just as fun for the cooking enthusiast who wants to be a part of every step as it is for the first-timer who’s happier observing and assisting (or taste testing). Our venue has delicious cocktails and wines that will pair extremely well with your meal that you and your friends will prepare.
Chef Mark has a rich family history with food. His grandfather ran the busy San Francisco produce market, his grandmother was a whiz at anything Italian, and his mother is a winemaker. At a young age he attended the Institute of Culinary Education, then moved to Northern California to work in the kitchen at the famous Auberge Du Soleil in the Napa Valley.
A lengthy career working with gourmet food products gave him an opportunity to work closely with hundreds of the world's top chefs and culinary professionals. After much travel he developed a deep passion for gourmet ingredients and embarked on a personal journey, opening his own artisan cheese shop and catering company encompassing all his dedication for food, cooking, and the passion of good eating.
The class will take place in Chef's home, where Chef will implement utmost safety and sanitation measures. Guests are invited to BYOB wine, champagne or beer. You are encouraged to bring reusable containers to take any leftover home. The chef has a small cat - in case you have allergies or need medication beforehand. The chef can put him in another room too.
