Involtini di carne, also known as braciole, bracioli, or bruciuluni —are a favorite southern Italian treat that are often served for the Sunday family dinner. What is wonderful about this dish is that there are so many different variations, and every family that makes braciole has its own special traditional recipe. In this fun and intimate course, we take ingredients like authentic pecorino romano cheese, fresh parsley and loads of garlic, then bundle and tie it into a steak wrapper like a present at your family dinner!

The beef itself is truly special, but after simmering in the oven, the sauce turns into a masterpiece – a cross between a super-rich beef stock and long cooked grandma’s style gravy. A “made in heaven” match for a creamy polenta.

While our beef finishes in the oven, we make the ultimate Italian style creamy polenta with mushrooms. There’s a bit of an art to making this hearty dish - from the toasting of the cornmeal, balancing of the butter and salt, to perfecting the consistency – all steps taught in the course. You will leave feeling like you spent a leisurely Sunday dinner in Napoli with the family!

*The ticket is on per person basis* No experience is required! We provide all the equipment and ingredients, which are easy to find at local markets in case you wish to recreate the dish on your own after the class. Our events are casual and meant to be fun and instructive, not hardcore. This class is designed to be just as fun for the cooking enthusiast who wants to be a part of every step as it is for the first-timer who’s happier observing and assisting (or taste testing). When we say small size, we mean it. This class will host only up to two people at a time so if you are coming as a couple, you will be the only group present and receive Chef Mark's undivided attention and advice during the experience.

Meet your chef instructor
Chef Mark has a rich family history with food. His grandfather ran the busy San Francisco produce market, his grandmother was a whiz at anything Italian, and his mother is a winemaker. At a young age he attended the Institute of Culinary Education, then moved to Northern California to work in the kitchen at the famous Auberge Du Soleil in the Napa Valley. A lengthy career working with gourmet food products gave him an opportunity to work closely with hundreds of the world's top chefs and culinary professionals. After much travel he developed a deep passion for gourmet ingredients and embarked on a personal journey, opening his own artisan cheese shop and catering company encompassing all his dedication for food, cooking, and the passion of good eating.

Where the class will be
Guest requirement
The class will take place in Chef's home and is BYOB! At this time, all guests are required to wear masks during class regardless of vaccination status. Your chef instructor will wear a mask throughout the entire class as well. Guests will be allowed to remove their masks when eating and drinking. As a result, booking parties will be socially distanced from one another while eating. The nature of our classes are set up so that booking parties will work together during class, sharing both ingredients and equipment.
Cancellation policy
Reschedule request have to be made at least 48 hours before the class for groups of less than 6 people and 14 days for groups of 6 people or more. Cancellations are not permitted and tickets are non-refundable.See terms and policy.

Chef Mark was amazing !! This was a birthday gift for my husband and he absolutely LOVED it !! We had great conversations and had a wonderful time together with Chef Mark ! He answered every questions we had and explained everything step by step. The class was very personalized, and even I as a beginner, had no trouble cooking along with the chef ! 👏👏👏 AND most importantly, THE FOOD WAS AMAZING ! Great date idea, birthday gift , and a weekend fun !!

Chef Mark was a delight to learn from. We made beef braciole over polenta and took away so many cooking tips for our culinary journey. It was very casual but it was such a privilege hearing Mark share his cooking journey and his love for food.
