This class takes place at Chef Gus' spacious commercial kitchen, where you will be able to get a first hand experience of what it's like to be a professional chef behind a production kitchen. This quintessential Spanish dish was often featured as a special late lunch treat on Sundays for the poorest-farmers families in Valencia. Its preparation was not complex. The idea was to take all week's left-over and mix with rice. They were farmers so they had all the ingredients very close by like pork, beef, chorizo, rabbit & rice. They also farmed faffron, an exotic spice brought from Morocco. Now, there are many different Paella styles and ingredients, but all maintaining the unique flavor of the Saffron.

Our events are casual and meant to be fun and instructive, not hardcore. This class is designed to be just as fun for the cooking enthusiast who wants to be a part of every step as it is for the first-timer who’s happier observing and assisting (or taste testing).
