The traditional Tortelli Piacentini is a ricotta and spinach filled pasta from Emilia-Romagna, the region known for this egg and flour combination. These delectable tortellis appear to be braided with a small tail, swimming in a delicious sage brown butter sauce. Once you master the basics of fresh pasta making in this class, you will be equipped to try different shapes and forms with your newfound knowledge and tips and tricks shared by Chef Paulina.

In this highly hands-on, interactive class, you will learn step by step how to create, knead, and shape fresh classic tortelli pasta from scratch. If you thought butter and sage sauce was simple, think again! You will learn every step that goes into making this silky and indulgent sauce that can make or break the overall dish. Not only will you have mastered the tips and tricks of creating home-made sauce but also you will not want to go back to store bought, jarred pasta sauces or boxed pasta ever again after this class! Once you have finished making you dish, we will dine together and say cheers to celebrate the fruits of our labor.

No experience is required! We provide all the equipment and ingredients, which are easy to find at local markets in case you wish to recreate the dish on your own after the class. Our events are casual and meant to be fun and instructive, not hardcore. This class is designed to be just as fun for the cooking enthusiast who wants to be a part of every step as it is for the first-timer who’s happier observing and assisting (or taste testing).

My name is Paulina, and I would like to take you on the culinary tour of a lifetime! After studying European Food Business in the Netherlands, France, and Italy, I absorbed so many wonderful culinary experiences that I am passionate about sharing. Additionally, I went to culinary school on the island of Malta and learned a variety of Mediterranean cuisines. I believe that food is love with a special ability to bring people together and help foster community.

Where the class will be
There is a large parking lot for guests to utilize. The kitchen where class will take place is in the building on the right of the church. Classes are BYOB friendly.
Guest requirement
This BYOB (wine, champagne or beer) class takes place in the hall with a kitchen attached to St Ephrem Church in El Cajon. The hall/kitchen is located in the building to the right of the church, there is a parking lot for guests to utilize outside. At this time, all guests are required to wear masks during class regardless of vaccination status. Your chef instructor will wear a mask throughout the entire class as well. Guests will be allowed to remove their masks when eating and drinking. As a result, booking parties will be socially distanced from one another while eating. The nature of our classes are set up so that booking parties will work together during class, sharing both ingredients and equipment.
Cancellation policy
Reschedule request have to be made at least 48 hours before the class for groups of less than 6 people and 14 days for groups of 6 people or more. Cancellations are not permitted and tickets are non-refundable.See terms and policy.

Paulina was a real pleasure to learn from. She was personable and knowledgeable. I wished the dinner presentation was a little nicer…picture showed tomatoes and nice dishes but we only had the butter sauce on paper plates with plastic forks. Food tasted great, and it was nice to learn how to make the tortellis.
