Caribbean Jerk Chicken

Dying to escape to somewhere remote and beautiful? Why not join our Caribbean Feast class and feel yourself transported to Jamaica (by way of the New Jersey suburbs)?

In this fun and hands-on class, you will be guided step-by-step in creating a whole meal consisting of marinated and grilled Jerk Chicken, Eggplant Creole, and (dairy-free) Homemade Lemon & Ginger Sorbet. You will learn basic knife skills and how to make eggplant creole from scratch- consisting of tomatoes, peppers, rice, peas, eggplant, and coconut cooked and mixed with spices and beans. The dishes will be prepped indoors and then everyone will go out to the backyard to grill the chicken.

Weather permitting, you will then plate, garnish and enjoy eating your Caribbean style meal outdoors. Chef Gill will share insight on how to source fresh, seasonal ingredients and specialty spices in order to recreate the perfect Caribbean Feast on your own at home.

No experience is required! We provide all the equipment and ingredients, which are easy to find at local markets if you don’t already have them in your home kitchen. Our events are casual and meant to be fun and instructive, not hardcore. This class is designed to be just as fun for the baking enthusiast who wants to be a part of every step as it is for the first-timer who’s happier observing and assisting.

Meet your chef instructor
Chef Gill has worked in all facets in the foodservice industry. He has taught cooking for students training to be professional chefs at Le Cordon Bleu College of Culinary Arts in Los Angeles and recreational classes for the home cook at The Gourmandise School in Santa Monica California, Hudson Table in Hoboken New Jersey, Cook Space in Brooklyn New York and Sur la Table in Los Angeles and NYC. He is a Certified Executive Chef, Culinary Administrator, and Culinary Educator. He is also a graduate of Johnson and Wales University and has a Graduate Certificate in Gastronomy from University of Adelaide Australia.

Where the class will be
Guest requirement
Guests are invited to BYOB wine, champagne or beer. The nature of our classes are set up so that booking parties will work together during class, sharing both ingredients and equipment. There is street parking available. Please ring the doorbell and Chef Gill will welcome you into his home.
Cancellation policy
Reschedule request have to be made at least 48 hours before the class for groups of less than 6 people and 14 days for groups of 6 people or more. Cancellations are not permitted and tickets are non-refundable.See terms and policy.
