This was a fun and informative class. Shin was thorough and knowledgeable. However, a few things that may improve this class for future participants: We were about 2 minutes early but Shin had already started. We didn't miss much but it would have been preferable he start at 1:00 (as advertised) or a little after. Each participant should at least be provided with one bottle of water, seeing as they get to eat what they create...and sometimes it was spicy. The venue (a deli) wasn't the best. Regular customers were around us, talking, and so it was a little hard to fully focus on the instructor. Shin let us all take pictures of the instructions on how to make sushi rice. It would have been more efficient to have ready-made handouts for each participant to take home. Speaking of the rice, I realize that we were not in a kitchen and so it was nearly impossible for us to learn how to make the rice with hands-on instruction...but seeing as that is a big part of sushi, maybe there should be a way to incorporate that piece into the lesson. Overall, we had a good time, learned quite a bit and got to enjoy a full, delicious lunch that we made! We may do one of the cheese-making classes in the future. Thank you.
