Classic Italian Dessert Trio

Simplicity! That’s what it’s all about. Italians don’t take dessert too seriously. However, the bursts of ripe fruit, slightly sugary bites, and sweet creamy finishes make the end of a meal shine nonetheless. In this class, we will create three traditional, yet very easy, Italian desserts worthy of “il centro del tavalo” (center of the table)!

Up first will be Marsala wine poached pear with minted ricotta. This dessert is deceptively simple and can be served warm or chilled. It can turn even the youngest Summer pears into a ripe delicacy. The marsala wine pairs well with whole milk ricotta and a drizzle of natural syrup for a very happy ending to any Italian meal.

Next: The biscotti cookie. This versatile cookie means “twice baked” – and that it is! Great for dunking in an after-dinner espresso or in your morning coffee for a rousing rise and shine, this cookie is good anytime! You may be surprised how simple they are to make, and the flavor combinations are endless. You may not want one of those expensive little biscotti in the fancy coffee shops ever again once you learn how to make your own.

Last on the list: Zabaglione with Summer Berries. This could be the blue ribbon winner for the best of Summer desserts! Juicy, sun-ripe berries nestled between a bed of luscious egg cream. Perfection! You will want to make this for your friends and family over and over and the versatility allows you to use different seasonal fruits!

No experience is required! We will send you the equipment and ingredients list, which are easy to find and you may already have them in your home kitchen. Just make sure you have most of these essential ingredients: flour, eggs, butter, sugar, salt, eggs, baking powder, vanilla extract, berries, pears, optional roasted almonds or pistachios, optional star anise or cinnamon sticks, whole milk ricotta, fresh mint.

Chef Mark has a rich family history with food. His grandfather ran the busy San Francisco produce market, his grandmother was a whiz at anything Italian, and his mother is a winemaker. At a young age he attended the Institute of Culinary Education, then moved to Northern California to work in the kitchen at the famous Auberge Du Soleil in the Napa Valley. A lengthy career working with gourmet food products gave him an opportunity to work closely with hundreds of the world's top chefs and culinary professionals. After much travel he developed a deep passion for gourmet ingredients and embarked on a personal journey, opening his own artisan cheese shop and catering company encompassing all his dedication for food, cooking, and the passion of good eating.
