You’ll start by creating a fresh, crunchy veggie roll filled with creamy avocado, crisp cucumber, and bright green onion. It’s finished with a drizzle of huancaína sauce—a beloved Peruvian classic made from ají amarillo peppers a silky, golden sauce that originally is from the city of Huancayo, huancaína sauce was traditionally served over potatoes, but in Nikkei cuisine it becomes a vibrant, zesty companion to sushi.

Ebi Sake Avo Roll with Ají Amarillo Sauce

Next, you’ll craft a luxurious roll featuring shrimp, green onion, and cream cheese, all wrapped in delicate slices of fresh salmon. This roll is crowned with a bright, flavorful ají amarillo sauce—a smooth, lightly spicy Peruvian pepper sauce known for its fruity depth and signature sunshine-yellow color. What we can tell you is that it will be topped with acevichado sauce—a Nikkei favorite inspired by classic Peruvian ceviche. This creamy, tangy sauce balances lime, ají peppers, garlic, and mayo for a flavor that’s both refreshing and indulgent, echoing the bright acidity of ceviche in a sushi-friendly form.

Chef Pablo has worked in kitchens throughout the world including Chile, Peru, Ecuador, Mexico, France, Germany and USA including valuable experience at Kusaki LA. This immersion has allowed me to master everything Sushi. Recently, In my last years I have been redefining sushi with a Vegan twist and combining it with the Peruvian flavors using all the Japanese techniques. Guest requirement

The nature of our classes are set up so that booking parties will work together during class, sharing both ingredients and equipment.  Please arrive 15 minutes early to allow time to park and check in. Outside drinks are not allowed. Beverages are available for purchase at our partner's bar-Bar Moxy.

To ensure the safety and enriching experience of all participants, we require children aged 14 to 17 be accompanied by a parent or guardian during our cooking classes.  Classes are intended for adults 21+.


Cancellation policy
Reschedule request have to be made at least 48 hours before the class for groups of less than 6 people and 14 days for groups of 6 people or more. Cancellations are not permitted and tickets are non-refundable.See terms and policy.
