Embark on a culinary journey as we explore making the classic Italian pasta, Fettuccine, completely from scratch.
We will begin class by creating our pasta dough from scratch. While your pasta dough rests, your Chef Instructor will demo how to make a beautiful, creamy pink sauce: salsa rosa. Think the American favorite, vodka sauce, only rooted in Italian tradition. Its origins are a bit of a delicious mystery, bridging the bright acidity of tomato sauce and the rich indulgence of cream sauce. Some food historians believe it evolved as a way to mellow the intensity of tomato sauces, creating a more versatile and comforting option. You will be the judge of that!
Attendees will have the option to roll out the pasta dough the old fashioned way, using a rolling pin, or with the help of a pasta machine. Once your fettuccine is shaped into is classic strands and then cooked in boiling water, enjoy sitting down to enjoy a beautiful plate of pasta!
No experience is required! We provide all the equipment and ingredients, which are easy to find at local markets if you don’t already have them in your home kitchen. This class is designed to be just as fun for the cooking enthusiast who wants to be a part of every step as it is for the first-timer who’s happier observing and assisting (or taste testing).
Guests in the same booking party will work together throughout the class. Please arrive 15 minutes early to check in. Drinks are available for purchase from the venue and are NOT included in the ticket price. Outside drinks are not allowed. 21+ only.
Tommaso was co-owner of the Italian restaurant TANTI BACI in NYC, before spending time in
Peru to learn about Amazonian produce and agricultural practice. It was in Peru that he started the tomato sauce brand DUE AMICI, which is still being sold in Lima today. After moving back to NYC, Tommaso opened PROPRIO COSI, a company that will serve “on the go” organic food, with ingredients from local farms and businesses. He’s also the producer of a bi-monthly literary podcast series based on award-winning short stories and novels.
Class will take place on the Terrace of the hotel. The nature of our classes are set up so that booking parties will work together during class, sharing both ingredients and equipment. Drinks are NOT included in the ticket price, but will be available for sale at the venue. Outside drinks are not allowed. 21+ only.
