Let's embark on a delicious journey through time and taste with a dish that embodies Italian comfort food: Farfalle all'amatriciana! These delightful bowtie pastas, nestled in a rich and savory sauce, have a history as rich and vibrant as their flavor.

The class will start off by crafting the perfect canvas for the sauce: fresh Farfalle. You will be guided through the process of making a simple yet satisfying pasta dough from scratch. Using just flour and eggs, you'll transform it into a silky, elastic sheet. Then, with a few deft movements and a touch of creativity, we'll shape the dough into it little bowties – the Farfalle.  As an added bonus, your instructor is providing a delicious homemade Panna Cotta dessert for you to enjoy at the end of your meal.

While many associate amatriciana with Rome's bustling trattorias, its true origins lie nestled in the hills of central Italy, in the charming town of Amatrice.  The earliest versions, likely dating back over a thousand years, were a symphony of salty pecorino cheese and cured guanciale (pork cheek), cooked together and tossed with pasta for a hearty meal. The addition of tomatoes, arriving in Europe from the Americas in the 16th century, transformed the dish into the beloved red sauce we know today.

No experience is required! We provide all the equipment and ingredients, which are easy to find at local markets if you don’t already have them in your home kitchen. This class is designed to be just as fun for the cooking enthusiast who wants to be a part of every step as it is for the first-timer who’s happier observing and assisting (or taste testing).

Guests in the same booking party will work together throughout the class.  Please arrive 15 minutes early to check in. Drinks are available for purchase from the venue and are NOT included in the ticket price. Outside drinks are not allowed. 21+ only.

Tommaso was co-owner of the Italian restaurant TANTI BACI in NYC, before spending time in Peru to learn about Amazonian produce and agricultural practice. It was in Peru that he started the tomato sauce brand DUE AMICI, which is still being sold in Lima today. After moving back to NYC, Tommaso opened PROPRIO COSI, a company that will serve “on the go” organic food, with ingredients from local farms and businesses. He’s also the producer of the literary podcast FICTIONZ, a bimonthly series of premium narrative podcasts based on award-winning short stories and novels.

Guest requirement

Class will take place on the Terrace of the hotel.  This space is indoors with a fun bar.  The nature of our classes are set up so that booking parties will work together during class, sharing both ingredients and equipment.  Drinks are NOT included in the ticket price, but will be available for sale at the venue.  Outside drinks are not allowed. 21+ only.   For any guests booked individually, if you are part of a larger group please email hello@cocusocial.com at least 48 hours prior to your class to confirm your full booking party size and the names of the others in your group.

Cancellation policy
Reschedule request have to be made at least 48 hours before the class for groups of less than 6 people and 14 days for groups of 6 people or more. Cancellations are not permitted and tickets are non-refundable.See terms and policy.
