Centered around Peruvian-inspired small plates, this class will guide you through essential techniques and ingredients that define the region’s cuisine. From marinating and skewering to shaping and frying, you’ll explore how to build layers of flavor while creating a variety of shareable dishes.
What You’ll Make:
Guests will work together to create a selection of South American-style tapas. Start with juicy chicken anticucho skewers, marinated in a flavorful blend of spices and grilled to perfection. Then, prepare mini causas—layered bites of seasoned potato and creamy avocado. You’ll also make crispy patacones (twice-fried plantains), perfect for dipping and stacking. To tie everything together, you’ll prepare a bright and zesty salsa criolla, adding freshness and balance to each dish.
Along the way, Chef Alvaro will share insights into the roots of Peruvian cuisine and how these dishes reflect a rich blend of cultural influences. Once everything is ready, you’ll enjoy your creations together or pack them up to go.

We provide all the equipment and ingredients, which are easy to find at local markets if you don’t already have them in your home kitchen. Our events are casual and meant to be fun and instructive, not hardcore. This class is designed to be just as fun for the cooking enthusiast who wants to be a part of every step as it is for the first-timer who’s happier observing and assisting (or taste testing).
