Guests will discover the pleasure of making fresh pasta into delicious and unique stuffed ravioli using a bounty of Tuscan style ingredients. While most of Italy is infamous for its pasta dishes, the ravioli in Tuscany truly stand out. It’s the pure, fresh and bountiful ingredients that make these raviolis an experience to remember, and this class features many of them. Made with no animal meat product this class excites vegetarian and non-vegetarian pallets to the very best.

Get the “how to” on our chef’s luxurious filling, then mix your own dough from imported flour and hand roll thin sheets to cuddle the beautiful treasure. Finally, we will create a veggie broth bursting with the flavors of shallots and fresh herbs for them to swim in topped with imported Reggiano cheese.

But wait! No meal is complete without the sweet! Little else says “Italian” like a good ladyfinger cookie. In the class you’ll learn how to make them soft and sponge-like in the center and a little crisp on the outside. Perfect!

Then chef will release his secret recipe for prosecco sparkling wine cream to smother them in and top them off with tart raspberries! Like a version of tiramisu but with wine and berries instead of coffee and cocoa!

If bringing your own wine, chef recommends an Oregon Coast Pinot Noir, Italian Barbera, or California Chardonnay if white is preferred.

We provide all the equipment and ingredients, which are easy to find at local markets in case you wish to recreate the dish on your own after the class. Our events are casual and meant to be fun and instructive, not hardcore. This class is designed to be just as fun for the cooking enthusiast who wants to be a part of every step as it is for the first-timer who’s happier observing and assisting (or taste testing).

Meet your chef instructor
Chef Mark has a rich family history with food. His grandfather ran the busy San Francisco produce market, his grandmother was a whiz at anything Italian, and his mother is a winemaker. At a young age he attended the Institute of Culinary Education, then moved to Northern California to work in the kitchen at the famous Auberge Du Soleil in the Napa Valley. A lengthy career working with gourmet food products gave him an opportunity to work closely with hundreds of the world's top chefs and culinary professionals. After much travel he developed a deep passion for gourmet ingredients and embarked on a personal journey, opening his own artisan cheese shop and catering company encompassing all his dedication for food, cooking, and the passion of good eating.

Where the class will be
Guest requirement

Guests are invited to BYOB wine, champagne or beer.  Guests are also encouraged to bring their own aprons to class and containers to bring any leftover home. Masks should be worn at all times and gloves will be provided.  You will be seated with your party, otherwise social distancing guidelines will be in place.

Cancellation policy
Reschedule request have to be made at least 48 hours before the class for groups of less than 6 people and 14 days for groups of 6 people or more. Cancellations are not permitted and tickets are non-refundable.See terms and policy.
