Fish Stew with Mussels, Fennel, and Chiles

Description

Like Cioppino or bouillabaisse, but better because...well, your teacher for the evening is no ordinary chef. Michelin Star, 3 Stars on NYT, Iron Chef Winner, Top Chef Master...the list goes on! She is a superwoman in the culinary industry and her name is Anita Lo - the first female chef to be invited as a guest chef at the White House (under the Obama administration.) Chef Anita will teach you a beloved seafood centric dish from her cookbook SOLO that is sophisticated to impress anyone, yet approachable and simple for every home cook to confidently master. Come one, come all, this flavorful dish is not only healthy for you, it's also healthy for the planet - mussels are one of the fastest-growing proteins available, and they are filter feeders, meaning that they clean the waters around them as they grow. Pairing that with a lesser-known species of fish like porgy or sea robin is heart healthy in more ways than one.

Chef Anita will be providing step-by-step instruction from prepping all of the ingredients to properly cooking to plating for final finish.

The chef will be using techniques that are approachable for any home cook. No experience or fancy kitchen equipment are required! We will send you a list of ingredients & equipment required to cook along with Chef Anita in real time. Some of the essential ingredients you will need include: Firm white fish filet, such as porgy or sea robin (one 4 oz. serving per person,) mussels (other seafood such as shrimp, squid, and/or calamari can be added or substituted) crusty bread, fennel bulb and fronds, thyme, onion, garlic, red pepper flakes, white wine, tomato, lemon, clam juice, olive oil, salt and black pepper.

Prepare your mis-en-place ahead of the session (according to the recipe), grab a glass of wine, and get ready to cook along with a world-renowned chef! You will have the opportunity to engage with Chef Anita throughout using the Zoom chat box. There will also be time at the end for a formal Q&A.
