French Patisserie Classics: Fruit Tarts & Madeleines

Ooh la la! Feel transported to a classroom at Le Cordon Bleu in Paris for a day as you learn the tips and tricks of creating the perfect French Fruit Tart and Madeleines from Chef Fran, who graduated from the famous LCB in Paris.

Learn how to make these delicious French tarts filled with almond cream and decorated with colorful fruit. We will first make the pie crust, then use various fruits such as strawberries, pears, peaches and raspberries to create various designs on top. You have the choice of either using one large tart pan (9-12 inches) or four smaller ‘mini’ tart pans. To add to your basket of ‘French goodies’, we will finish by making Madeleines, shell-shaped cakes baked in a mold.

You'll have the opportunity to interact with Chef Fran throughout the class and ask questions along the way. You will receive an email with the equipment and ingredients list. However, the main ingredients required to participate along with the chef in your own kitchen include: eggs, AP flour, unsalted butter, salt, almond flour, vanilla essence/extract, your favorite fruits such as berries, kiwi, pear, etc., apricot jam for the glaze, lemon zest, and baking powder. An electronic hand mixer and food processor are recommended for this class, but not mandatory if you don't own one.

Former Modern Dancer and 'survivor of the 1960s' Fran retired from her job as a portfolio manager in 2011 to attend the Paris Le Cordon Bleu school. She completed her diploma in Cuisine in 2014 and has taught French and Spanish cooking to adults both in Australia and the United States.

Please make sure you have everything measured out and ready as described so that you can follow along with our Chef in real time! Cancellation policy
Reschedule request have to be made at least 48 hours before the class for groups of less than 6 people and 14 days for groups of 6 people or more. Cancellations are not permitted and tickets are non-refundable.See terms and policy.
