Chocolate Making 101

Description

Calling all chocolate lovers!

Explore and unleash your inner Willy Wonka by turning melted chocolate into three fun and delicious confections! Learn how to make your own candy bars, roll your own flavored truffles, and perfect your chocolicious decorating using a paper cornet.

No experience is required! We provide all the equipment and ingredients, which are easy to find at local markets if you don’t already have them in your home kitchen. Our events are casual and meant to be playful and instructive, not hardcore. This class is designed to be just as fun for the baking enthusiast who wants to be a part of every step as it is for the first-timer who’s happier observing and assisting (or taste-testing). You will work with other students in groups of 2-4. 

Please arrive 15 minutes early to check in, especially if you’re part of a large group. Drinks are available for purchase from the venue and are NOT included in the ticket price. Outside drinks are not allowed. 21+ only.

Gina Lee has spent 15 years whipping up delicious sweets, from the pastry kitchens of Food Network chef Bobby Flay’s restaurants (Mesa Grill, Bar Americain, and Gato) to gracing the pages of Martha Stewart’s Living and Weddings magazines with her recipes and photogenic desserts. Before graduating from the Institute of Culinary Education, Gina also decorated many of the beautifully elaborate sugar cookies at Eleni’s in Chelsea Market.

We had a good time and it was a nice outing just before Valentine’s Day. It was a pleasant social experience. Things to improve: the instructor and assistant need to elimate profanity from their vacabulary and presentation style. They were both so friendly, but it just took the professional caliber down a notch. Ingredients: eliminate corn syrup from any recipes that are recommended and taught to student in these courses. It’s a garbage ingredient that is not used anywhere but the USA or by any respected chocolate manufacturer. Even Hershey’s doesn’t use corn syrup. No reputable chocolatier in Europe would touch this stuff and plain sugar, vanilla sugar, or powdered sugar with some liquid would give better results without the typically corn syrup aftertaste. Also, understanding that gianduja is too expensive for this course, there’s surely got to be a better substitute that almond butter and olive oil. Both the idea and taste made us cringe. A spoonful of store-brand Nutella would have been much more similar to gianduja and cost effective.
