Escape to the streets of Thailand as we create one of the most famous Thai classics, Green Chicken Curry! Hosted by our resident Thai Chef Instructor who originates from Isaan Province, you will have the unique opportunity to learn the cultural history of Thai cuisine and traditional techniques from the most authentic source!

In this fun and hands-on class, you will be guided step-by-step in recreating this classic, beginning by learning how to make a Green Curry paste from scratch in both a traditional manner, and a more convenient, time-saving manner. As the curry paste is the heart and soul of a curry, great attention will be paid to teaching you how to create a flavour profile and taste for the right balance of flavours. You will also be guided through basic knife skills and where to source fresh, seasonal ingredients and specialty spices in order to recreate the perfect Green Curry at home. Green Curry is traditionally served with either jasmine rice or rice vermicelli noodles and we shall be using the latter. Once you have created your masterpiece, you will then plate, garnish and devour your creations with your new found foodie friends!

No experience is required! We provide all the equipment and ingredients, which are easy to find at local markets if you don’t already have them in your home kitchen. Our events are casual and meant to be fun and instructive, not hardcore. This class is designed to be just as fun for the baking enthusiast who wants to be a part of every step as it is for the first-timer who’s happier observing and assisting (or taste testing).

Please arrive 15 minutes early to check in, especially if you’re part of a large group.

Meet your chef instructor
Chef Joy learnt how to cook from a very young age, watching on from her Mother from their home in Isaan province, Thailand. Her interest in sharing her passion for traditional Thai food and expanding it professionally began when she moved from Thailand to Brooklyn in 2009. Chef Joy refined her culinary knowledge and skills working in New York City restaurants and within the catering industry. In 2015, she then founded her own company, 'The Grasshopper, Brooklyn', where she provides personal chef, cooking class and catering services. Chef Joy loves to share her joy for cooking and Thai culture and cuisine with others.

Learned how to make green curry paste from scratch, which was super helpful. Joy even gave tips as to where to find ingredients or if it could be substituted with something else. Wish it was more hands on and every 2 people rather than 4. Nonetheless, it was fun and a good experience.

Joy was great, extremely thorough and sweet! She walked us through the recipe & directions step-by-step and circulated to make sure everyone was on task and enjoying themselves. The 2 things that would've made this a 5-star experience would be starting on time and having cutting boards & knives for each participant. I know the former was to give latecomers a buffer but that left some of sitting & waiting for over 30 mins since the instructions were to arrive 15 mins before the class started. Nonetheless, it was a great experience overall and I would definitely take another class with her.
