Join Chef Shereen for a hands-on baking experience where you'll learn the fundamentals of classic pâte à choux, the versatile pastry dough used to create light, airy cream puffs and elegant éclairs. Perfect for beginners and baking enthusiasts alike, this approachable class will build your confidence as you mix, pipe, bake, fill, and decorate two iconic French pastries using techniques you can easily recreate at home.
What You'll Make:
You'll prepare classic pâte à choux from scratch and learn proper mixing and piping techniques before baking your pastries to golden perfection. Then you'll make a silky vanilla pastry cream, fresh sweetened whipped cream, and finish your creations by filling delicate cream puffs and chocolate-glazed éclairs.

Our classes are casual, approachable, and designed to be fun for everyone—whether you love being involved in every step or prefer to observe, assist, and taste along the way. Your workstation will be fully prepped so you can focus on learning, baking, and enjoying the experience.

You will be seated with your booking party and may work with other students in groups of 2–5 by sharing ingredients and equipment. Drinks will be available for purchase from the venue and are not included in the ticket price. Outside beverages are not permitted. 21+ only.
Being raised in a Caribbean household in the Bronx, Chef Reen was consistently introduced to vibrant and robust flavors that enriched her culinary perspective. From a young age, she actively assisted her grandmother with cooking and baking, fostering a deep appreciation for the culinary arts. Reflecting on her time with her grandmother, FloJo, she draws continual inspiration from those cherished moments. One of her most memorable experiences is baking a traditional Caribbean cake known as Jamaican Rum Cake, also referred to as Black Cake. Recognizing her passion for baking, she embarked on a professional journey within the food industry, gaining valuable experience at esteemed establishments such as Babbo Ristorante and Otto Enoteca, among others. After two decades of dedicated work in the culinary field, she was confident that baking is her true calling. To advance her expertise, she enrolled in culinary school, graduating from Auguste Escoffier School of Culinary Arts with a degree in Pastry and Baking, and graduating at the top of her class with honors. Her unwavering passion for baking has transformed into the creation of exquisite and visually stunning desserts, reflecting both her dedication and skill.
The nature of our classes are set up so that booking parties will work together during class, sharing both ingredients and equipment. Guests with single tickets may be asked to work with another individual or small group. Drinks are available for purchase from the venue and are NOT included in the ticket price.
